I know that I’m simply ravenous just writing about what is, in fact, my favorite food on earth: queso!
Instead of solely relying on restaurants for my queso (cheese dip) fix, I recently decided to whip up a batch of my own that rivals any restaurant quality queso. And I consider myself a queso connoisseur, so trust me when I say this!
Grab this Texas Queso recipe with La Vaquita Cheese below!
Mmm just look at that ooohy-gooey delicious-ness!!
A Delicious Texas Queso Recipe
Ingredients:
1 cup of salsa (I used fire-roasted)
4 oz can of diced green chilis
half a block of velveeta cheese (cubed)
4 tablespoons of heavy cream
1 roma tomato (diced)
handful of fresh cilantro
1/3 cup of La Vaquita Cheese
drizzle of your favorite hot sauce (I used Torchy’s Diablo Sauce)
*Optional (a scoop of guacamole)
Instructions:
combine salsa, velveeta & heavy cream in a saucepan over medium heat
Simmer until hot & runny
transfer to your favorite serving bowl
top with cilantro, tomatoes, hot sauce and La Vaquita Cheese
serve with tortilla chips

Whoever first decided to top their cheese dip off with even more cheese, I salute you! La Vaquita’s Queso Fresco (fresh cheese) is a Texas-made cheese that has a smooth & creamy texture and crumbles just perfectly. While it looks similar to feta, it’s not nearly as strong and makes for a fabulous addition to any dish, whether Tex-Mex or not. I love the way it tastes sprinkled over a slice of pizza, roasted veggies & even hummus!
There are so many things I love about living in Texas, but I have to say the food just might be number one. When we get together with friends down here, we almost always eat Mexican food, we make margaritas (when we’re not pregnant) and we grill cheese-filled jalapenos wrapped in bacon when we cook out! When you’re surrounded by such authentic ingredients in the most delicious of flavors, it’s hard not to soak it all up and enjoy, as often as possible!
